In 1921 Coco Chanel asked Ernest Beaux for "a women's perfume that smells like a woman" and accepted the fifth sample. A century later, Chanel's in-house perfumer Olivier Polge continues that tradition of structural perfumery. The house owns its rose and jasmine fields in Grasse, allowing a level of compositional control no other major house can match.
